Our Story

The aroma of slow-cooked goat, laced with earthy spices, was the soundtrack to Ricardo's childhood. In the sun-drenched ranch of Nochistlan, Zacatecas, his family were birrierios, masters of the ancient craft. He learned not from cookbooks, but from the rhythm of his father's hands, the patient stirring, the careful tending of the earthen oven. He understood then that the best birria wasn't just food; it was a testament to hard work and heartfelt passion.

Ricardo's dream, however, had to cross borders. He and his beloved wife Lupe embarked on a journey to the United States, a journey paved with sacrifice. California's bustling kitchens, Florida's and Philadelphia sun-baked fields, and the clang of machinery in Texas factory—each job was a stepping stone, a lesson learned. Finally, they landed in Fort Worth, Texas. Even amidst the unfamiliar landscape, the taste of home lingered.

The dream of his own birrieria never faded. After long shifts at the factory, Ricardo and Lupe would transform their backyard into a makeshift kitchen. The savory scent of their birria, simmering in large pots, would drift through the neighborhood, drawing in curious neighbors and homesick transplants. Word spread, carried by satisfied customers and the irresistible fragrance.

Ricardo's former boss, saw the potential. A mentorship-alliance was formed and a guidance a glimmer of hope for the birrieria Ricardo had always envisioned. But partnerships, like recipes, sometimes need tweaking. When the initial venture didn't align with Ricardo's vision, he didn't falter. He had built a reputation, a loyal following, and the unwavering support of Lupe and his six children.

He doubled down, pouring every ounce of his energy into his dream. Every early morning, every late night, every carefully chosen ingredient was a testament to his dedication. From those humble backyard beginnings, Birrieria Los Chivos de Oro was born, a golden beacon of his heritage and his unwavering spirit.
